Postdoc in food protein chemistry


Department of Food Science is offering a postdoc position for a period of 3 years commencing 1st July 2018 or as soon as possible thereafter.

The position is part of a research project supported by the Ministry of Environment and Food of Denmark under the Green Development and Demonstration Programme named INFANT-I: Tailored processing of bioactive ingredients for high-end infant formula. The INFANT-I project aims to develop and document improved health qualities of protein ingredients for infant formula and offers a unique possibility to work in close collaboration with Arla Foods Ingredients, a Danish company producing milk-based protein ingredients, and Department of Animal and Veterinary Sciences at UCPH. The postdoc position is one of three positions placed at Department of Food Science, and will focus on detailed characterisation and quantification of modifications in milk protein ingredients for infant formula, in particular Maillard reactions and formation of Advanced Glycation Endproducts (AGEs), but also with protein oxidation. The candidate is expected to work as part of a project team and be prepared to deliver results within specific deadlines, and will be part of the Food Proteins group headed by assoc. prof. Marianne Nissen Lund:   


The ideal candidate has the following competences and skills: 

  • PhD in food chemistry or an equivalent. 

  • Expertise in protein chemistry and protein modifications (Maillard reactions, oxidation), preferably with milk proteins. 

  • Expertise in analytical chemistry and hands-on experience with liquid chromatography (HPLC, UHPLC, LC-MS/MS), SDS-page, UV-Vis and fluorescence spectroscopy. 

  • Good interpersonal and communication skills required for team work across disciplines. 

  • Ability to work independently and deliver results within deadlines. 

The postdoc’s duties will include research within food protein chemistry as well as teaching to a limited extent.
